Salad: Red Cabbage Slaw
This red cabbage slaw salad is great for gut health. Serve as an appetizer, a side dish or as a garnish over rice and other vegetable dishes.
1/2 cup apple cider vinegar
2 tablespoons honey
1/4 cup extra-virgin olive oil
2 teaspoons celery seed
Salt and freshly ground black pepper to taste
1/2 head red cabbage, cut into roughly 1 1/2-inch chunks
2 small carrots, grated
1 small red onion, chopped
4 green onions
1 cup dried cranberries or craisins
Whisk together vinegar and honey in a large bowl until dissolved. Slowly whisk in oil, celery seed, salt and pepper to taste. Toss in cabbage, carrots, red onion and craisins to coat well. Cover and let sit at least 1 hour.
Serve as a side dish, appetizer or garnish. My 2 year old is not into raw vegetables so we will use it sparingly here and there wherever I can sneak it in. Over rice will be my easiest escape since he loves rice.
